    A new juice to try...

    (Copied)

As summer comes to a close and fall starts to make its annual appearance, it’s the perfect time to juice up some late summer and early fall produce gems.

I found a basket of local strawberries this week and packed them in my sons’ lunches. Since lunchtime at school is quick and my 3rd grader doesn’t typically have time to eat everything I pack, he came home with the beautiful berries still in his lunchbox. They were the perfect addition to our morning juice. Juicing is a great way to use produce that’s about to go bad or that’s too soft to chew but still bright, vibrant and nutrient dense.

Carrots and apples are some of fall’s favorites and mine too! I love carrot apple combos like carrot apple ginger and carrot apple lemon. This time I added some lettuce for more veggies.

    Ingredients:

    2 carrots

    1 1/2 apples
    1/2 lemon, peeled
    4 leaves romaine lettuce (cos)
    5 strawberries

    Directions:
    1.) Wash produce well.
2.) Remove core from apple (optional) and cut rind from lemon (or leave peel on for more zest) OR squeeze lemon juice directly into your glass.
    3.) Juice all produce.
4.) Pour over ice and enjoy!

Substitutions:Romaine lettuce – spinach, kale (Tuscan cabbage)
    Carrots – sweet potato
    Lemon – lime, ginger
    Strawberries – raspberries, cherries

I tried the Sweet September Juice this morning and was pleasantly surprised by the lime. I first made it according to the recipe (using the whole lime) and the lime taste was very strong. So, I added more carrots, the whole red pepper and a few more stalks of celery and it ended up being very refreshing.

Summer produce is vibrant and fresh but sadly the season is winding down in many regions. I love fresh juice and I’m often looking for a great tasting veggie-heavy option. This mostly-veggie (lime is the only fruit!) gem is full of health promoting antioxidants in the carotene family thanks to the red pepper and carrots. Lime not only adds a great flavor but phytonutrients with metabolism and immune supporting actions, like vitamin C, limonoids and even has some calcium. Enjoy while you still have access to these seasonal veggies.

    Ingredients:

    2 carrots
    3 celery stalks
    1/2 red bell pepper (capsicum)
    1 lime

    Directions:

    1. Wash all produce.
    2. Peel lime (optional).
    3. Juice all ingredients well and enjoy!

    Substitutions:

    Carrots – sweet potato
    Celery – cucumber
Red pepper – green, orange or yellow pepper, tomato
    Lime – lemon, ginger

Day Five is just about over. I'm anxious to see if the exercise, eating whole veggies (rather than juiced) and more protein will make a difference in my glucose reading in the morning.

Another day down eating healthier... Woo Hoo!

P.S. I do enjoy that morning juice for breakfast. :)

How did you get yours to taste like V8? Mine didn't. However, it sure made a lot of juice!

Day Five Exercise: T-Tapp Step Away the Inches (I heard this is great for pear-shaped women/saddlebags). I'm curious to see if this will improve my glucose in the morning.

Day FOUR getting ready to end.

I had about five hours of sleep last night, but wasn't tired today.

I did notice around 2 pm that I was feeling stressed, though. Not sure if it was just the situations or part of detox. I only had one day where I felt bad (Day Two) so not sure.

Well, I'm getting ready to settle down and watch a new movie, "Mom's Day Out".

    Night All!

    Here's to Day Five approaching!

Love that film. Watched it maybe ten times. I always get something new each viewing. I like the special features on the DVD too.

Did you get my post about your Fall Recipe? I've sent it and got a confirmation that it posted, but it's not on your wall. I've been in touch with IT at the website and there are issues that people are having and it's random. So, I love the recipe and will be trying it tonight, hopefully you get this post as well. They can see where I'm posting but it's not showing up on the other end, it's so weird.

I read it in my email notification. :) Was it on your wall, by chance?

I need to get peppers and plan to try it tomorrow or this weekend. Let me know what you think.
