This is a group for vegetable hating Rebooters to share recipes you can live with and maybe even love. It is January 2016 and I'm JUST starting my reboot. I have NEVER liked vegetables and have spent my whole life avoiding them. I know at this age I really need to get serious about nutrition -- for my health, my weight, and my very life. I will share what I find works for me and hope you will do the same. Thanks for joining me in this quest and sharing your discoveries!

So the extreme dry eye problem I was experiencing is better now. It was REALLY extreme. Dry burning eyeballs, could hardly work, really felt my vision was being impaired. Now I've started adding a bit of olive oil to my juices, just to get some good fats. Trying to drink like I'm supposed to, but like usual, I'm not really taking in as much as they say. I would say, though, that the olive oil is helping.
Today in celebration of 10 lbs in one week, I made butternut squash soup (a reboot recipe: Coconut Thai Butternut Squash Soup) for lunch. I've never bought a butternut squash in my life until yesterday. The whole thing was pretty straight forward and easy, and actually tasted amazing and creamy! It called for butternut squash (baked flesh down with olive oil and sea salt), red curry paste, coconut oil, onions, garlic, coconut milk, lime juice, and ginger. I didn't have vegetable broth, but used some whey from my husband's batch of home made mozzarella cheese last night. Also, one can of coconut milk wasn't quite enough to make up the 2 cups, so I used 1/4 cup almond milk to top it up. Wow was that ever nice, so smooth and creamy. No idea how many calories, but one lunchtime bowl won't kill me.
that sounds so delicious. I'm on day 7 of a 9.5 day juice fast, and am already planning the meal I'll make to break my fast with on Wednesday night. I may need to add the Coconut Thai Butternut Squash Soup recipe to my list of things to make later in the week.
So I tried to make a V-8 with some spice last night. I am not a big veggie lover as to why I joined this group. This is what I did. I think next time I might cut back on the Cilantro and maybe only use a little Jalapeno. The one I used last night was pretty spicy and I love spicy. All together I think it was too much tomato. It made about 32 oz and it was hard, very hard to put this down. Not sure what I could do to make it taste better? It could be the bell pepper as well, all I had was a large red.
2 large (7-1/4" to 8-/1/2" long)
3 stalk, large (11"-12" long)
0.5 cucumber (8-1/4")
4 medium whole (2-3/5" dia)
Bell Pepper (red)
.5 large (2-1/4 per pound, approx 3-3/4" long, 3" dia.)
Just FYI. I would cut back the Jalapeno by half or use a small pepper. :) I love spicy but it was overwhelming.
Welcome, Kristopher! I haven't tried a V-8 recipe before. Did you make this up or was it from a recipe? Where are you at in your juicing plan?
Kristopher did you take the seeds out. That also might help. We made drink with a cantaloupe it was suppose to be 1/2 cantaloupe and 1/2 honeydew which we didn't have. 2 apples, 7 leaves of kale & chard. It was good.
Just did this week's weigh in and loss 6.2lbs total 11.6lbs. Day 17 and I'm not craving sweets. I am amazed. I just want veggies. Checking out recipes on internet for vegan cooking with veggies. I tried a green drink with grapefruit. Would not recommend. Too much grapefruit wow my husband and I felt out lips suck back into our throats it was so sour.
LOL great. I have two big bags of grapefruit sitting here waiting to be next. Congrats to you on your weight loss!! Way to go. Today is day 8 for me and I've lost 10 lbs. Thought I blew it yesterday with a smoothie. I bought almond milk to try some smoothies but at 500 calories for one drink, more than I'd been having for my whole day of intake, I'll pass. It's not worth it and I think the veggie juices are even better than the smoothie!! (shocked and amazed). I'm like you now, I'm stunned at how I'm actually liking the veggie juices. It blows me away. Onward we go!
thanks for the tip about the grapes, Lalune. I kept making that mistake when I tried juicing in the past and didn't realize it, and so made it worse by adding more sweet things.
I got a recipe for a green juice that's geared towards beginners/veggie haters:
2 bunches of baby spinach
a few sprigs of parsley (optional)
and ginger root OR a half of a lemon (also optional)
spinach is the mildest and smoothest of the leafy green veggies so it's easier to drink than chard or kale.
That sounds like one I've had. It's good! I found I didn't get very much juice out of the spinach though, compared to the kale. Also, I think I might actually like kale as a juice ingredient. I had thought a certain smell/taste I was noticing was the apple or lemon, but one day when I put kale into the juicer first, I realized it was the kale smell that I liked. This has been an adventure of surprises!

I have not tried cabbage yet. Next time will buy one white and red too love cabbage salads.
HI Lulane. I have Breville juicer too. Just finished the 5 day Juicing Challenge and will continue with juicing and eating healthy. As suggest perhaps you should check into your calorie count, at 1000 calories a days should be OK.
There was one juice I did not care for on the 5 day Challenge but forgot which one. I will stick with Orange Juice, Joe's Mean Green, Red Juices and then a healthy dinners. I will try a smoothie instead of a juice too for myself but my son does not care for smoothies.
LOL omg, warning. I had a few red grapes before sitting down with my Mean Green. Holy cow, don't ever do that. The sweet of the grapes has now made my Mean Green takes A LOT more like vegetable juice. Ugh.
Wondering what the results are of other people here. Are you liking the juices? Do you have some favourites? Are you losing weight, having any symptoms?
